Let me explain 👇🏼

1️⃣ A calorie is NOT just a calorie.

I understand in a basic scientific sense, calories
in vs calories out = weightloss.

BUT the quality of the calories counts. Eg a banana might have roughly 90-105 calories, which is about the same as a fun size Snickers bar.
A banana contains vitamin B2, B3, B5, B6, B9 (Folate), potassium, magnesium and importantly fibre. This means as well as fueling your body with nutrients, it can help manage your blood sugar levels.

Stable blood sugar levels stave off hunger and prevent you from grabbing at random food items.

A Funsize snickers bar contains about the same calories but zero of the health benefits (just the opposite). It’ll spike your sugar levels, then drop them again. This is when we are most likely to grab for anything we can get our hands on to re-stabilise our blood sugar levels.

2️⃣ Carbs are not bad, they’re a MACRONUTRIENT.

It is the body’s main source of energy.

They’re literally essential for your body to work properly, support brain function, help break down protein and preserve muscle mass.

They also provide fibre, which are so important for that blood sugar 🙌🏼

3️⃣ Eating clean isn’t really that hard

Let’s be honest, we’re all too lazy to check out food labels and figure out exactly what makes it into our food.

Don’t be.
Be proactive about what makes it into your body.
You have apps, Al and google at your fingertips, making it so easy to learn about ingredients and figure out what numbers and long words mean.

You also have me (and I’m sure lots of other social media accounts) that will help educate you.
Don’t just download some app to scan food items.

Be empowered enough to understand food labels to make your own decisions.

I wish I knew..

I wish I knew that the supermarket isles weren’t filled with food items that were carefully regulated for human consumption.

I wish I knew that companies aren’t held responsible for all of the chemicals that make it into their food products (because our country’s food regulations allow them).

I wish I knew that it was completely my responsibility to learn and understand what all of those weird ingredients were.

I used to live in LaLa land, believing wholeheartedly that there was NO way some of this stuff would be allowed in our food.

I mean surely someone would be tightly regulating that, right? Not really.

I wish I knew earlier. Because I would’ve done better… for myself and for my kids.

Now that I know better, I do better.

Although statistically our age of life has increased, research has shown that our quality of life has decreased; thanks to chronic illnesses that are now appearing at a much earlier age in the overall human population.

The way our food has been grown, prepared, processed and sold has changed drastically since the last couple of generations.

I’m not saying food is the only culprit, just a contributing factor.

I hope that I can help you find your way through the mess of crazy ingredients and make finding alternatives a little bit easier.

It’s the reason Clean Eats exists 🥰

The truth is…

Clean Eats was born in a time of real struggle (hello anxiety 🙋🏻‍♀️)

I had just had my first baby, I was trying to find my place as a mum, I had lost my career (and what felt like my whole identity), and parent a constantly sick baby; who I didn’t know wasn’t hearing at the time.

We were in and out of hospitals, doctor’s appointments and specialists trying to figure it all out.

I was tired, sleep deprived and anxious ALL the time 👀

Anxiety got me GOOD. I just wanted to be with my baby.

But I also needed to work and give myself purpose. And Clean Eats truly was my saving grace.

It gave me a sense of purpose, something to focus my attention on, and a new skill to learn and develop.

As much as I hate anxiety (if it was a person, I’d punch it square in the face), it gave me this.

And I’m so proud of that.

This little thing that I can call my own forever.

The truth is…

CLEAN PANCAKES 👇🏼

Easy, clean, vegan.

No refined sugar, no dairy, no eggs, no soy, nothing artifical.

Ingredients:

• 2 cups almond milk
• 2 tablespoons pure maple syrup (more if you prefer them sweeter)
• 2 cups organic spelt flour (or any flour you like!) I’ve used spelt, oat flour, buckwheat, chickpea etc. any flour you like works
• 1/2 teaspoon bi carb (not baking soda)
• 1 tablespoon white of apple cider vinegar (you won’t taste this!! - it’s necessary to activate the bicarb and makes the pancakes fluffy).
• Choc chips or fillings as desired

Method:
1. Combine milk and maple syrup in a bowl and mix thoroughly.
2. Add the flour cup by cup (I don’t sift, just whisk well).
3. Look at the consistency. If you’d prefer them thicker add more flour, and thinner add more milk or water.
4. Add the bicarb soda and mix again
5. Add the vinegar and whisk again. Once you start seeing little bubbles you’ll know that the bicarb has been activated.
6. Add Choc chips and combine.
7. Cook on medium heat on a non-stick pan.
8. Add toppings and enjoy!!

Is it just me?

I’ve seen so many people around me start becoming more health conscious, and I don’t know if it’s just me or if it’s an actual thing that’s happening?

My most viewed stories is my ‘Smart Swap’ series by a mile!! Thousands of views and heaps of conversations sparked in my dms.

A lot of shock about the kinds of ingredients that make it into our food, a lot of requests for me to review different products and a lot of people sharing their own alternatives (which is always amazing to see).

I’m curious about whether you think this is a trending thing, legitimately people being more invested in their health and what they’re putting into their bodies, or if it’s a case of just my following?

I’m usually surrounded by 50/50 in my real life. A few people that realllly care and a few people that just don’t deep it.

It feels like the tide is changing, and that’s really cool to see.

I’ve noticed that people really do want to be healthier, but they just don’t know how to be, OR they don’t have the energy to put into doing the research.

I’ve seen so many people around me start becoming more health conscious, and I don’t know if it’s just me or if it’s an actual thing that’s happening?

All the cracks on the peanut caramel as I sliced?

This would usually have driven me crazy, but given the fact that these were being dipped in chocolate, I had to let it go 😂

But now it’s ALL I can see as I watch and edit this video.

I almost didn’t post it because it bothered me so much. So I wonder if it’s a me thing and I’m a little unhinged 🤪

Here’s the recipe 👇🏼

Guys this is so EASY and so YUM!

And only 4 ingredients 🙌🏼

*SAVE* this so you can come back to it 💗

You’ll need:

• 1 medium/large banana
• 2 ingredient caramel (2 tablespoons tahini, 4 tablespoons pure maple syrup
• @pana_organic baking chocolate bar

Method:

1. Chop banana into even slices and lay it on a baking tray with baking paper (in a heart shape if it’s for Valentine’s Day).

2. Combine the 2 tablespoons of tahini and 4 tablespoons of maple syrup and mix really well until it resembles a caramel. It should be sweet enough, but you can add more maple if you’d like it sweeter. Make sure there are no clumps.

3. Evenly spread the caramel over the banana and place in the freezer.

4. Break up the chocolate and melt it in a small bowl. This can be done in the microwave or via double boiler method (in a bowl over a small pot of water).

5. Check if the caramel has set in the freezer. If it’s still too liquid, let it set a few extra minutes. I poured the chocolate right over the top and it was fine.

6. Sprinkle freeze dried fruit if you wish (optional: it won’t really impact the taste).

7. Set in the freezer for at least 3 hours.

Enjoy!!

The caramel will be a little sticky and liquidy when you eat it, but so worth the mess 🙌🏼

That thing that changed me 👇🏼

Whenever I meet somebody who’s really health conscious, there’s always a reason they became that way.

An event that caused them to rethink the ingredients they consume, an ill family member, or sometimes a child.

Always a ‘wake up call’ or something that changed their trajectory.

For me, it was something that really underpins the whole creation of my little business.

I was in my early twenties, living my best life, consuming whatever I wanted whenever I wanted.

I started developing a strange rash, and lumps on my body that suddenly wouldn’t disappear. I spent months getting tested, biopsied and trying to figure out what was going on.

They eventually suspected an autoimmune disorder (that they weren’t sure of) or an allergy. It felt like my body was turning on itself.

I got myself tested and found that I had a histamine response to a couple of very specific food additives. Reading food labels became something I had to do.

And oh. my. goodness.

I was realllllly NOT prepared for what I’d find. I couldn’t pronounce most things, and everything looked like it had a letter or a number.

Now I had to Google half of what was in my food. I was just FLOORED. I didn’t want to believe that what I was eating was allowed to be in my ‘food’. How was this happening and why was this happening??

And soooo came the crappy task of cleaning up my diet, properly. Like for real. Consuming mostly wholefoods, reading all the labels, avoiding highly processed foods. And eventually making my own desserts.

For a while I just wanted to shout. Scream at the top of my lungs whenever I saw someone I loved consuming something yucky. I just wanted to say “you wouldn’t eat that if you knew what was in it”…
(I think I did for a while… sorry fam 😂)

But that wasn’t going to help anyone. So instead I put my energy into making yummy desserts that were CLEAN. I wanted to be an example of how clean food can be absolutely delicious…

And Clean Eats was born 🥰

Why do I love to torture myself?

I’ve never quite enjoyed the process of making donuts, not because it’s hard but because it’s so incredibly time consuming.

I would individually scoop out the excess of the donuts with a spoon, spending so much time trying to achieve perfection..

Until I discovered that this lovely little piping tip is the answer to all my donut problems 😂

I can’t believe it’s EXACTLY the same size of the inside of the mold.

I wanted to kick and hi-five myself at the same time haha safe to say donuts won’t be a problem moving forward 🤭

One of the most common questions I get asked is if I ship or post my desserts.

I’m almost always met with disappointment when I say no.

There are a couple of reasons why I don’t do this.

I have actually done a couple of test shipping runs, and both times, the service was average and the desserts arrived in a terrible condition.

I had a really lovely customer that wanted treats for her cafe (when I used to wholesale), but she was based in Sydney.

I walked back to the car (a long walk), sat in it, and could still see my boxes sitting on the filing cabinet…anxious that they’d start softening if they weren’t cared for appropriately.

I left with them still sitting there 🫠

A day or two later, I received a photo from that customer, and I honestly couldn’t believe the state of my desserts.

I’ve never seen anything more atrocious in my life 😂😂

They had COMPLETELY softened, and had melded into each other. It was like somebody waited for the desserts to soften, then grabbed the box and shook it as hard as they could 😳

It was wild.

This lovely customer was adamant that I try again. This time I did a bit of research and selected a different freight company.

I drove another 40 mins again, explained the situation, and told them what had happened last time.

They seemed a bit more professional (no eye rolls this time), but my desserts still arrived in a similar state.

They definitely weren’t as bad, but most definitely not how I’d want to represent myself through my desserts in a little cafe window.

One of the most common questions I get asked is if I ship or post my desserts.

I’m almost always met with disappointment when I say no.

There are a couple of reasons why I don’t do this.

I have actually done a couple of test shipping runs, and both times, the service was average and the desserts arrived in a terrible condition.

I had a really lovely customer that wanted treats for her cafe (when I used to wholesale), but she was based in Sydney.

I explained that I didn’t ship them, but she was adamant that she wanted me to try, and was even happy to cover the (hefty) shipping costs.

The thing I love most about this Blondie aside from how good it tastes, is how CLEAN it is!

With only 7 ingredients, it’s full of natural protein. I store these frozen and pull one out every night for his lunchbox.

It calls for a can of chickpeas, but don’t freak out, you can’t taste them! Once blended with all of the other ingredients they work an absolute charm.

They’re really important for texture and nutrient value, so please don’t skip them.

INGREDIENTS

* 1 can chickpeas
* 1/2 cup cashew butter
* 1/2 cup oat flour (gluten free oats blended finely - you can now purchase gluten free oats from Woolies!!)
* 1/2 cup pure maple syrup
* 1 teaspoon baking powder
* Splash vanilla
* 1/2 cup choc chips + additional for the top. I didn’t have any choc chips on hand so I just used @sweet_william_chocolate chocolate buttons.

DIRECTIONS

1. Line a 20cm x 20cm pan with baking paper and preheat oven to 180 degrees.
2. Place all of the ingredients into a blender (except the choc chips) and blend well.
3. Fold through the choc chips then pour into tin.
4. Top with a tew extra choc chips and place in the oven.
5. Bake for 20-25 minutes or until golden on the top.
6. Let sit for 30 minutes to cool completely before slicing (don’t do what I did haha)

NOTES
* Should make 16 pieces.
* Check if it’s cooked with a skewer

My brain is actually the worst at remembering things (I’m convinced I should be looking into that further 🤔) but somehow I tell myself I’ll remember all the details the next time I make the slice or cake.

And I NEVER do …

The result?

I have to start again with the recipe testing until I get it right… sometimes bits and pieces come to me as I’m working.

Nothing ever goes to waste thanks to hubby and the kids 😂 but for real I need to start writing this stuff down!!

Only 6 ingredients!!

Easy, delicious, no equipment necessary and easily adaptable. What more could you want out of a dessert?!

Full recipe 👇🏼

Ingredients:
• 1 cup rice puffs
• 1 cup chopped roasted unsalted peanuts
• 1 cup puffed quinoa (can sub for an extra half cup peanuts & half cup rice puffs)
• 1/2 cup peanut butter
• 1/3 cup maple syrup
• 1/4 cup melted coconut oil

• Dark chocolate for the top

*optional - can add 1/2 cup chia seeds, hemp seeds, buckwheat grouts or any other goodness you want to include in there!

Method:
1. In a large bowl, combine the rice puffs, peanuts and quinoa puffs.
2. In a separate bowl, combine the peanut butter, coconut oil and maple syrup and mix really well.
3. Pour the wet peanut butter mixture over the dry mixture and combine thoroughly.
4. Spoon into a tray of your choice (you can press it into a whole tray if you don’t want to do individual cups to create a slice).
5. Melt some dark chocolate and spoon or drizzle on top. You don’t want to overdo the chocolate because it’ll take away from the amazing taste of the mixture. Even a drizzle would be fine!
6. Set in the freezer for 30 minutes and enjoy!

What a WASTE!!

I’ve gotten into the habit of recording everything, because everything is content blah blah 🤪

I was excited about recording these cakes because I thought it would make a good video.

Nice little drizzles, how satisfying 🫣

Until I rewatched the video and all you can see is my hand 😩

Whyyyyy am I like this?

I didn’t record a birdseye view because you’d miss the drizzle.

So I angled the camera and stuck my hand in the way just to make sure you’d still miss seeing it 🫠

Anyway, these little Choc Orange beauties are one of my favourite creations. Chocolate and Orange is such a killer combo!

Free from gluten, dairy, soy, refined sugars, artifical colours, flavours and animal products … ALWAYS 🙌🏼

No but really I am, especially in the scheme of everything happening in the world right now.

It’s just been one of those weeks, that I was glad was coming to an end.

It was so, SO wonderful to receive this feedback.

It has felt kinda dumb posting about cakes with so much going on but this really put a smile on my face and brought me joy.

I’m fine 👀

No but really I am, especially in the scheme of everything happening in the world right now.

It’s just been one of those weeks, that I was glad was coming to an end.

It was so, SO wonderful to receive this feedback.

It has felt kinda dumb posting about cakes with so much going on but this really put a smile on my face and brought me joy.

A clean dessert GENIUS? I’ll take that 😜

Nobody has ever called me a genius before, simply because,
I know this may be hard to believe but .. I’m not one 😂

It was a Salted Caramel cheesecake topped with 4 different bar flavours (Twix, Mars, Snickers & PB Fudge) anddd Double Choc Donuts.

All of the extras went into a box to enjoy on the side 🥰

I spent a lot of time trying to work out how to make it look good haha it’s not my usual style but I think I made it work.

I can’t believe this happened 🫠

I was slicing up some bars for a cake I’ve been working on.

I thought it would be cool to show you the insides of the bars that’ll be in the mixed boxes coming up soon and rattle off the flavours for you so you know what you’re ordering.

Then I noticed 3 big fails 🫠

I was going to try to edit them out and then figured you know what? This is reality.

We always show the perfect edits, but today didn’t go perfectly.

I NEVER waste treats, so I wasn’t about to start slicing up some more bars just for a video.

Here are my 3 FAILS 👇🏼

1️⃣ The Mars bar chipped because the knife slipped when I sliced it. Instead of that perfect finish at the end, the edges underneath the caramel are all jagged…

I had to clean it up for the end shot.

2️⃣ Somehow I managed to dip my Twix sideways.

Out of ALLLLLL the Twix bars I dipped yesterday, I magically chose the ONE bar I dipped sideways - I’ve never done that before.. what are the odds that’s the one I choose to slice on camera? 🤦🏻‍♀️

It didn’t make it in the final line up cos it looks wonky 😂

3️⃣ The Snickers is missing the peanuts 😳

The whole tray contained nuts, and all the snickers contain nuts, but again, I chose the ONE bar that happened not to have any in the centre??

So now it looks exactly like the Twix. Which is pointless.

Great. I’m great at recording videos and creating content 👀

I wanted to cry and then thought screw it.. just post haha

Cos you know what they say? Everything is contentttttt - even the fails.

Anyway..
These bars will be making it into mixed boxes:

Even what you’d consider the most boring videos are videos people want to watch.

To be honest, I never believed it until some of my videos got some pretty high views.

They were the videos I’d record but never post, I had just kept them in the archive.

I never ever wanted to post a video of my date caramel because to be honest, I didn’t think it was as pretty as decorating a cake.

I’ve always had a sweet tooth, and don’t have the time or energy to make something extensive when I’m peckish.

So, I’ve landed on your feed because I’m going to help you satisfy your sweet tooth in 5 MINUTES 🥰

Here’s a quick and clean Banana Split, Snickers style 🍫🥜

Lesss go

1. Slice a banana in half and top with some granola or yoghurt.

2. Drizzle Peanut Butter, @mayversfood is my fav, crushed peanuts and some @pana_organic choc hazelnut spread OR you can add some melted chocolate.

Add berries & ice cream if you’re keen or you can throw some cacao nibs or choc chips on top too.

Combine some protein powder with the yoghurt for an extra hit of protein if you’re keen 🙌🏼

What do I say no to and why? 👇🏼

If I’m honest there isn’t much I straight up say no to.

I always try to work with my customers to come up with something that works for everybody.

BUT there are some things I just can’t work with.

1️⃣ Overnight or last minute orders

I’m fully aware that most customers wouldn’t know that the process of raw cake making is at least a couple of days.

Between soaking nuts, setting times and an opportunity to decorate, I couldn’t really make a last minute cake even if I wanted to.

There’s no chance I’m going to promise you something I can’t deliver. Even if I started working on a cake right now, it’s at least a 2-3 day process 🤓

2️⃣ Fondant Cakes

Sometimes people ask me to whack fondant on top of my cakes or bake them a fondant one. It’s just not my thing 💁🏻‍♀️

I understand my strengths and work with them.

3️⃣ Too many cakes in a week

I NEVER bite off more than I can chew. Who am I kidding? That’s a lie 🤭

BUT I have learnt to stop doing that.

If my diary is full, I will try really hard to say no (even though sometimes I end up saying yes) 😂

Each cake deserves its own time, and I don’t like rushing through anything.

I still get excited when I get an order from my wonderful customers 💕

I do a little silly dance every time somebody trusts me to create a cake and be part of their special occasion.

I still get a bit of imposter syndrome - and question myself sometimes.

But I’m proud of how far I’ve come and how many challenges I’ve overcome along the way.

Small business is not for the faint of heart, and longevity means a lot sacrifice and rolling with the ups and downs.

I still get a bit of imposter syndrome - and question myself sometimes.
